Ingredients: 4 boneless, skinless chicken breasts. 2 cups bell peppers, sliced. 1 cup red onion, sliced. 1 cup zucchini, sliced. 1 cup yellow squash, sliced. 4 tablespoons olive oil. 2 tablespoons Cajun seasoning. Salt and pepper to taste. 4 cloves garlic, minced. Fresh parsley for garnish.
Instructions: Warm the grill up to a medium-high level. Add the chicken, bell peppers, red onion, zucchini, yellow squash, olive oil, Cajun seasoning, salt, pepper, and minced garlic to a large bowl.
