Mashed Potatoes in Disguise
Since I'm on the "up" roll of yo-yo dieting (like I have been many times before) I'm always searching for healthy substitutes for my favourites (i.e. carbs). This week I decided to try mashed cauliflower because I've been hearing a lot of buzz about it recently.
I have to say that this was one of my successful food substitute trials. All I did was boil the cauliflower as you would potatoes, infused some olive oil with smashed cloves of garlic, and seasoned the cauliflower with this, sea salt and Mrs. Dash's Herb and Garlic no salt seasoning then topped it with some chopped chives.
The verdict? Awesome! I would say that mashed cauliflower is comparable to mashed potatoes. They hold the flavour the same way, and the texture is just a bit lighter which eliminates the heavy starchiness that mashed potatoes have. One thing I would do differently is I wouldn't boil them for as long as I did (a "duh" moment) because cauliflower is not starchy at all and is a more tender vegetable than a potato.
So if you're in search for a healthy substitute, definitely give this a try! It's super easy to make and it actually tastes good!
