Ingredients: 4 slices of thick-cut bread. 2 large eggs. 1/2 cup of milk. 1 tsp vanilla extract. 1/2 tsp cinnamon. 1/4 tsp nutmeg. 1/4 cup of granulated sugar. 1/4 cup of maple syrup. 1 banana, sliced. 1 cup of strawberries, hulled and halved. 1/2 cup of blueberries. Wooden skewers, soaked in water for 30 minutes.
Instructions: In a mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, nutmeg, and granulated sugar to make the French toast batter. Cut each slice of thick-cut bread into bite-sized cubes. Dip the bread cubes into the French toast batter, making sure they are well-coated. Thread the coated bread cubes onto the wooden skewers, alternating with slices of banana, strawberries, and blueberries. Preheat a griddle or non-stick skillet over medium heat and grease it lightly with cooking spray or butter. Place the French toast kebabs on the griddle or skillet and cook for about 2-3 minutes on each side, or until they are golden brown and cooked through. While cooking, drizzle maple syrup over the kebabs and let it caramelize slightly. Remove the French toast kebabs from the griddle and serve them hot. Sprinkle with powdered sugar if desired.
