Ingredients: 1 cup cottage cheese. 2 large eggs. 2 tablespoons almond flour. 1/2 teaspoon baking powder.
Instructions: Put the eggs, almond flour, baking powder, and cottage cheese in a blender. Mix the ingredients together until the batter is smooth. Put a nonstick skillet on medium heat and use cooking spray or butter to lightly coat it. To make pancakes, pour small amounts of the batter onto the pan. Once the top starts to bubble, flip it over and cook the other side until it's golden brown. You can top your fluffy low-carb keto cottage pancakes with fresh berries or your favorite sugar-free syrup.

Recipe alert! This is a #onepot #fouringredients meal! Making a squash soup for lunches this week. The giant squash is from my parents' garden (kept in cold storage over the winter). This soup is easy, delicious and quick. Even quicker in my #instantpot!. All you need is: 1. #squash 2. #onions 3. #tomatoes 4. #chickpeas Prep by peeling and chopping the squash and dicing the onions. 1. Sautee the onions in a little oil until soft. 2. Add the chickpeas, and season with #salt and #pepper. I also added some #sumac and #chiliepowder, but you can use whatever you like. Some #paprika would be great! 3. Add the squash, followed by the tomatoes with liquid. If necessary add some water until it just covers all the ingredients. 4. Instantpot pressure cook for 12 minutes, or simmer for about 30 minutes on a stovetop until the squash is cooked. 5.
