A delicious and satisfying keto-friendly recipe featuring roasted pumpkin, fresh sage, and zucchini noodles. This low-carb dish is packed with flavor and perfect for a cozy meal.

Ingredients: 1 small pumpkin, peeled and diced. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 tablespoon fresh sage, chopped. Salt and pepper to taste. 4 medium zucchinis, spiralized into noodles. 1/4 cup grated Parmesan cheese optional.

Instructions: Get the oven ready by heating it up to 400F 200C. Add diced pumpkin to a baking sheet along with minced garlic, chopped sage, salt, and pepper. Top with 1 tablespoon of olive oil. Roast the pumpkin in an oven that has already been heated for 20 to 25 minutes, or until it is soft and slightly caramelized. Set the big skillet over medium-low heat and add the rest of the olive oil. Cook for 34 minutes, until the noodles are just barely tender after adding the spiralized zucchini. Mix the roasted pumpkin with the zucchini noodles in the pan. Sprinkle to mix. If you want, you can sprinkle grated Parmesan cheese on top of the hot dish.
