What a great combination! This Blueberry Corn Salad has fresh, sweet blueberries, crunchy corn kernels, and a lot of different flavors from the herbs, red onion, cherry tomatoes, and feta cheese. The balsamic vinaigrette dressing brings it all together, making it a healthy and refreshing salad that can be served at any meal or get-together.
Ingredients: 2 cups fresh blueberries. 2 cups fresh corn kernels. 1 cup cherry tomatoes, halved. 1/2 cup red onion, finely chopped. 1/4 cup fresh basil leaves, chopped. 1/4 cup fresh cilantro leaves, chopped. 1/4 cup crumbled feta cheese. 1/4 cup balsamic vinaigrette dressing. Salt and pepper to taste.
Instructions: Put the fresh blueberries, fresh corn kernels, cherry tomatoes, and finely chopped red onion in a large bowl. Add the chopped fresh basil and cilantro leaves slowly. Break up the feta cheese and sprinkle it on top of the salad. Add the balsamic vinaigrette dressing to the salad and mix it all together. Add pepper and salt to taste. Add everything to the bowl and mix it well. Put it in the fridge for at least 30 minutes before you serve it so the flavors can mix. Enjoy it cold!
