Petite Meatballs
Perfect for appetizers served with a dipping sauce.
1lb ground beef
1lb sweet Italian sausage
1/2 cup grated Parmesan
1 cup plain bread crumbs
1 egg
Salt, pepper, onion powder, garlic powder, parsley, basil
Preheat oven to 350 degrees. Combine all ingredients, make meatballs. Brown all sides in a nonstick pan on medium heat, oil not necessary. Once browned, bake in the oven for 15-20 minutes depending on the size of the meatballs. Tip #14 after you have combined all ingredients, make one meatball first to taste test the seasoning; add additional ingredients if desired.

How many times have you made pork chops and they’ve come out dry, tough and chewy? Just like the lamb chops, timing is important. Try this simple recipe for deliciously moist pork chops! P.S... this was another weeknight meal!
5 boneless pork chops, thin
4tbs flour
Garlic powder, onion powder, cayenne pepper, chili powder, paprika, salt, pepper
Olive oil
2 cups chicken stock
Lemon juice
In a shallow dish combine flour and all dry seasoning. Generously coat each chop and shake off excess. Heat pan with olive oil on medium heat. Cook chops for 2-3 minutes on each side. Set chops aside. In the same pan sprinkle leftover flour and allow to cook off in oil and juices. Add stock and roughly 1tsp of lemon juice. Bring to a boil and then reduce to simmer until sauce is thick. If necessary sprinkle additional flour. Add chops back to pan and cook for another 2 minutes spooning the sauce over. Serve with veggies, potatoes, rice or egg noodles. Enjoy!
