German Cookies 🌼
Vanillekipferl are traditional German Christmas cookies known for their delicate vanilla and almond flavor. These crescent-shaped cookies are a festive delight!
Ingredients: 250g all-purpose flour. 200g unsalted butter, cold and cubed. 100g ground almonds. 50g powdered sugar. 1 vanilla bean or 1 tsp vanilla extract. A pinch of salt. 100g powdered sugar for coating.
Instructions: Preheat the oven to 160C 320F. In a food processor, pulse together the flour, cold butter, ground almonds, 50g powdered sugar, scraped seeds from the vanilla bean or vanilla extract, and a pinch of salt. Mix until the dough comes together. Transfer the dough to a floured surface and shape it into a log. Cut the log into small portions and roll each portion into a crescent shape. Place the crescents on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-18 minutes, or until the edges are lightly golden. Remove the cookies from the oven and let them cool slightly. While the cookies are still warm, roll them in the remaining 100g powdered sugar until coated. Let the cookies cool completely and then roll them in powdered sugar once more before serving. Vanillekipferl cookies are ready to be enjoyed!

These German Chocolate Almond Thumbprint Cookies are buttery, nutty, and filled with a delightful coconut and almond mixture. The chocolate drizzle adds an extra touch of indulgence that everyone will love!
Ingredients: 1 cup unsalted butter, softened. 1/2 cup granulated sugar. 2 cups all-purpose flour. 1/2 cup almond meal. 1/2 teaspoon almond extract. 1/4 teaspoon salt. 1/2 cup sweetened shredded coconut. 1/2 cup chopped almonds. 1/2 cup semisweet chocolate chips. 1/4 cup heavy cream.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Melt the butter and mix it with the sugar in a large bowl until the mixture is light and fluffy. Mix in the almond extract until it's well mixed in. Mix the all-purpose flour, almond meal, and salt together in a different bowl. Mix the dry ingredients into the wet ingredients one at a time until a dough forms. As you prepare the baking sheet, roll the dough into 1-inch balls and place them on it. Make a hole in the middle of each cookie with your thumb. Put the sweetened shredded coconut and chopped almonds in a small bowl and mix them together. Fill up each thumbprint with the mix of coconut and almonds. After the oven is hot, bake the cookies for 12 to 15 minutes, or until the edges are just beginning to turn golden. After taking the cookies out of the oven, let them cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way. To melt the chocolate chips and heavy cream in a bowl that can go in the microwave, add them one at a time and stir them around every 30 seconds. Pour the melted chocolate over the thumbprint filling after the cookies have cooled. Wait until the chocolate is set before you serve it.
