Sweet and tangy grapefruit crinkle cookies with a soft center and a powdered sugar exterior. Ideal for citrus fans!
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/4 cup unsalted butter, softened. 1 egg. 1/2 teaspoon baking powder. 1/4 teaspoon salt. Zest of 1 grapefruit. 2 tablespoons grapefruit juice. 1/2 cup powdered sugar, for rolling.
Instructions: Melt the butter and mix it with the sugar in a bowl until the mixture is light and fluffy. Add the egg, grapefruit zest, and grapefruit juice and beat until everything is well mixed. Mix the flour, baking powder, and salt together in a different bowl. Mix the dry ingredients into the wet ingredients one at a time until a dough forms. Put the dough in the fridge for at least an hour with the lid on. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Take dough balls about the size of a tablespoon and roll them into balls. Cover every dough ball with powdered sugar all the way around. Spread the dough balls out on the baking sheet that has been prepared. Put it in an oven that has already been heated for 10 to 12 minutes, or until the edges are set but the middle is still a little soft. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down.
