There is a lot of chocolate flavor in these Triple Chocolate Cookies. They are rich and chewy. You can eat them whenever you want a chocolate fix!
Ingredients: 1/2 cup vegan butter. 1/2 cup brown sugar. 1/4 cup granulated sugar. 1 flax egg 1 tablespoon ground flaxseed + 3 tablespoons water. 1 teaspoon vanilla extract. 1 cup all-purpose flour. 1/4 cup cocoa powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup vegan chocolate chips. 1/2 cup chopped vegan dark chocolate.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a large mixing bowl, cream together the vegan butter, brown sugar, and granulated sugar until well combined. Add the flax egg and vanilla extract to the butter mixture and mix well. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in the vegan chocolate chips and chopped dark chocolate. Using a cookie scoop, drop dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are set. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
