The habanero peach pineapple glaze on these chicken skewers makes them just the right amount of sweet and spicy. When grilled to perfection, they're a great addition to any summer party or barbecue.
Ingredients: 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes. 1 cup habanero peach pineapple glaze store-bought or homemade. 1 red bell pepper, cut into chunks. 1 yellow bell pepper, cut into chunks. 1 red onion, cut into chunks. 1 cup pineapple chunks. Salt and pepper, to taste. Wooden skewers, soaked in water for 30 minutes.
Instructions: In a bowl, marinate the chicken cubes with half of the habanero peach pineapple glaze. Season with salt and pepper. Let it sit for 20-30 minutes. Preheat your grill to medium-high heat. Thread the marinated chicken cubes, red bell pepper, yellow bell pepper, red onion, and pineapple chunks onto the soaked wooden skewers, alternating between them. Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally and basting with the remaining glaze until the chicken is cooked through and has a nice char on the outside. Remove the skewers from the grill and let them rest for a few minutes before serving.
