Savor this delicious chocolate mousse made without any guilt, topped with a delightful strawberry chia topping. A nutritious and filling dessert, the creamy avocado-based chocolate mousse goes well with the sweet and tangy strawberry chia topping.
Ingredients: 2 ripe avocados. 1/2 cup unsweetened cocoa powder. 1/4 cup coconut milk. 1/4 cup honey or maple syrup. 1 tsp vanilla extract. Pinch of salt. 1 cup fresh strawberries, sliced. 2 tbsp chia seeds. 1 tbsp honey or maple syrup. 1 tsp lemon juice.
Instructions: Cut the avocados in half, remove the pits, and scoop out the flesh into a blender or food processor. Add the cocoa powder, coconut milk, honey or maple syrup, vanilla extract, and a pinch of salt to the blender. Blend everything until you have a smooth and creamy chocolate mousse. Taste and adjust sweetness if needed by adding more honey or maple syrup. In a separate bowl, combine the sliced strawberries, chia seeds, honey or maple syrup, and lemon juice. Mix well and let it sit for 10-15 minutes until it thickens into a chia strawberry topping. Once the chocolate mousse is ready, spoon it into serving glasses or bowls. Top the mousse with the strawberry chia topping. Chill in the refrigerator for at least 30 minutes before serving. Garnish with additional sliced strawberries, if desired.
