This Old-fashioned Ham Bone Split Pea Soup is a comforting and hearty dish, perfect for using up leftover ham bones. It's packed with flavor from the ham bone, vegetables, and aromatic herbs, making it a satisfying meal on a cold day.
Ingredients: 1 leftover ham bone with some meat still attached. 2 cups dried split peas, rinsed and drained. 8 cups water. 1 onion, chopped. 2 carrots, chopped. 2 stalks celery, chopped. 2 cloves garlic, minced. 1 bay leaf. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: The ham bone, split peas, water, onion, carrots, celery, garlic, bay leaf, and thyme should all be put in a large pot. Bring to a boil, then turn down the heat to low. Cover and simmer for about two hours, stirring every now and then, until the split peas are soft. Take the ham bone out of the soup and pull off any meat that is still on it. Chop the meat and add it back to the pot. Add pepper and salt to taste. Let the flavors blend for another 15 to 20 minutes by continuing to simmer. If you want, you can serve it hot with chopped parsley on top.
