What a week last week has been. And this weekend has been pretty busy too. After work on Saturday, I tried to lay in bed and rest but I guess the coffee I had or the nutritious breakfast and snack I had at work kept me awake enough to just sorta be inbetween sleep and awake. But I felt rested enough and ended up shopping with Nicole. I had a blast. The most fun I've had in a week!
Yesterday was pretty busy too. Woke up, enjoyed breakfast, went to church soon after, then around 1pm, lunch with Matt and errands. Then volunteering. Then grocery shopping with my mom. Then we came home and made dinner- tacos! She wanted to give tofu tacos a shot. She didn't end up enjoying them, while I thought mine was pretty good on a whole wheat tortilla with spinach, tomato, avocado, low fat mexican cheese blend and a bit of sour cream. Luckily, we had to make actual tacos for my dad so she enjoyed a ground chicken taco instead.
I slept pretty well and I could barely get up this morning, probably still recuperating from a long and busy week and weekend. Ran a few more errands after breakfast for things that were forgotten yesterday.
And I got home and exercised for the first time in 4 days! (That's the longest I've ever gone without at least some low key pilates/yoga). So today, I decided on some HIITilates and did all four videos. I'm really glad I did, because I enjoyed the hell out of it and my muscles were happy to be engaged again. I plan to go for a run or elliptical HIIT tomorrow before I start my new classes. I also spent time shredding up some carrots for carrot cake oatmeal this week and to add to whatever else I feel like incorporating some vitamin A deliciousness into. I also cooked some for dinner and probably have enough for the next few days at least. (I love carrots, what can I say?)
I feel like myself again and my body is happy with me and I've got a stock of oatmeal, honey, bananas, blackberries ($1/pint each!!, I bought 3), strawberries, oranges, carrots, spinach and greens, broccoli, greek yogurt, Siggi's yogurt, Morningstar and Bocca burgers, tuna, salmon, and brown rice to fuel the next two weeks (at least).
