***Recipe of the week!!! I found this delicious, easy to make recipe on Pinterest and made it even easier!!! :) Ingredients: 1lb ground chicken breast 1 bag of coleslaw mix (minus the dressing) 4 Tbsp soy sauce (low sodium preferred) 1 garlic clove (minced) 1 bunch green onion (optional) Directions: (Makes 3 servings) - In a skillet, cook ground chicken. Meanwhile combine minced garlic and soy sauce in a small bowl; set aside. - Once chicken is cooked thoroughly, add coleslaw mix to skillet and stir to combine. - Pour soy sauce mixture into the skillet and stir, continuing to cook for about 5 minutes or until cabbage is wilted, but still a bit crunchy. Serve with sliced green onion. Bonus: Make lettuce wraps using butter lettuce or iceberg lettuce leaves. #FoodieFriday Roasted veggies are such an easy and delicious way to meet your recommended daily intake!!! It's also a great way to use up those veggies that are going to spoil soon. Chop up whatever ya got, throw it on a pan, add a little olive oil and your favorite seasonings and pop it in the oven. Eat what you want and save the rest for the next days lunch and dinner.
