Smashed Pumpkin Toast with Pomegranate & Hummus
#175 Sandwich Maker - Roast Pumpkin
Everything on this plate was cooked on the sandwich maker. Even the rice! Over the next few posts I will give you the recipe for all the components of this meal. At the local farmer's market this week end I came across a new type of pumpkin. It seems to be a cross between a Kent (also known as a Jap) Pumpkin and a butternut pumpkin. By the way do you know that the jap pumpkin isn't refering to Japan, it stands for Just Another Pumpkin, J.A.P. So there was really no reason to change the name to kent, to stop the Japanese from being slighted!
Anyway this is a beautiful orange fleshed pumpkin. I peeled it, sliced it into rounds about 1 cm thick and placed it onto the paper hotplate for about 5 minutes. It has a really lovely flavour and is quite sweet. If you see it at the market, I'd recommend you try it. Unfortuantely I don't know the name of it. Perhaps next week when I go to the market I'll ask.
