Nobunaga:
The boss, obviously. Self proclaimed taste-tester but only exclusively for the dessert (i.e., Konpeito).
Lounges in the office and no one really knows what he does all day. Yet, for some strange reason when he's not there the restaurant falls apart.
Will bother the chefs to make him lunch when he's hungry (Hideyoshi nags him when he does), but actually, Nobunaga only does this when the restaurant is not so busy. When it's hell in there, he doesn't bother them.
If the restaurant is in need, he rolls up his sleeves and gets down to work, whether it be cooking, cleaning, waiting or expediting. He fills in the gap effortlessly and keeps the ship running smoothly when his team starts to struggle.
Hideyoshi:
Manager of front of house. Friendly, top tier service. 40% of the customers are here to see him.
Works like a horse everyday. Keeps the front of house staff in line, and enforces regular cleaning.
Helps Nobunaga with budgeting and inventory. Sometimes a bit of a stick in the mud for the kitchen team as he calculates the budget accurately. Usually finds inventory missing and goes bonkers on them.
Always the last to leave and close up the place. Hard working indeed. (ง •̀_•́)ง
Ranmaru:
No 1. tip earner of all the waiters. 30% of the customers are here to see him.
Always, always, manages to convince his table to get dessert or a glass of wine, which ups the bill (Nobunaga is happy).
Efficient and nimble, darts around tables to serve them, tops up their drinks and clears the plates. Also the dishwasher! It's unclear how he keeps up, it's almost as if he's at two places at once sometimes
In charge of marketing and social media, but is also capable of overseeing budget and other admin tasks if the respective people are unable to.
Masamune:
Head of Kitchen (Head Chef). Up at the crack of dawn buying fresh ingredients and prepping for service. 100% of the customers are here for his food.
Cooks like crazyyy, pumps food out efficiently and deliciously.
Loves his menu. Do NOT touch his menu. He WILL fight you. Only Masamune gets to touch Masamune's menu. Sometimes he will let Keiji make a dish for a special or an event. Doesn't let Ieyasu though, because his proposed dishes are always spicy.
Thrives under the pressure, makes sure his team is always having fun even when they are up to their necks in orders. He always makes sure to let them know he appreciates them after a hard day's work.
Keiji:
Sous chef 1. Preps most of the dishes with Masamune.
Oversees the proper preservation of food. Takes his job real seriously because Masamune refuses to compromise on freshness.
Like Masamune, good at keeping the moral high with his boisterous attitude, but he always chooses to be alone on his breaks. No one knows why :(
That inventory that is missing that drives Hideyoshi crazy? That's his work. Nobunaga knows it's him, but hey, let the wild child do what the wild child will do ¯\_(ツ)_/¯
Ieyasu:
Sous chef 2. Despite his urge to drown the food in chili flakes, he holds back because he knows better to do it to other people's food.
Efficient, not necessarily outstanding, but if he's not there, his absence is felt by the others.
Usually is the one who gets stuck cooking Nobunaga's ad hoc requests for lunch. He grumbles constantly as he does this but still does it anyway.
Strangely, despite his position as sous chef, he also handles administrative duties like pay roll and recruitment. It's hard to get recruited because Ieyasu is picky af
Kicho:
Expediter. The bridge between the front of house and the kitchen staff. Almost perfect at what he does. When they are unbelievably busy, he is the only one that can keep them organised - not even Nobunaga can do it like Kicho does it.
Used to oversee the budget, inventory, food quality, administrative, pay roll, human resources and front of house cleaning, when they first opened the restaurant. He's super human! (°ロ°)
Doesn't particularly thrive in the stress like Masamune, but his stress threshold is very high which helps keep everyone calm. No one panics because Kicho doesn't panic.
Sometimes, when Keiji and Masamune are mucking about, a glare from Kicho is all that's needed to put them back in line. ✧(🝦言🝦╬)
Mitsuhide:
Bartender and entertainer. 20% of the customers are here to see him. Not for the drinks but for his... other services (information dealing).
Only Nobunaga knows about this as Mitsuhide occasionally slips him insider trading tips sourced from finance clients (Nobunaga has made a lot of money from this and is quite happy). Otherwise, Mitsuhide keeps this... side job on the down low.
Ironically, is head of food quality control, despite not being able to taste. No one knows why he is in charge of this, but he does the job well so no one can complain.
The biggest tragedy in the restaurant occurred because of him on that one night he slipped Masamune alcohol before service. Their head chef was down and out. It was a disaster.
Mitsunari:
The restaurant mascot. A danger to the whole restaurant so he's station is OUTSIDE the building, pulling in customers with his sunny smile.
He's good at what he does and now at least 10% of the customers are here just to see him ♡(◕ᗜ◕✿)
He welcomes passerbys looking for a meal and ushers them in before they know it. Has a unique talent for selling the restaurant really well.
Hideyoshi once encouraged him to be the dishwasher. It did not work out well, Mitsunari ended up with vegetables, soap, and a used napkin in his hair which irked Ieyasu to the high heavens. Was a little sad when he got replaced by Ranmaru.
