Ingredients: 1 lb ground lamb. 1/2 cup almond flour. 1 small onion, finely chopped. 2 cloves garlic, minced. 1 tsp cumin. 1 tsp paprika. 1/2 tsp cayenne pepper. Salt and pepper to taste. 1 tbsp olive oil. 1 small pumpkin, peeled and cubed. 1 cup coconut milk. 1 tsp ginger, minced. 1 tsp turmeric. 1/2 tsp cinnamon. 1 head cauliflower, riced. Fresh cilantro for garnish.
Instructions: Preheat oven to 375F 190C. In a large bowl, combine ground lamb, almond flour, onion, garlic, cumin, paprika, cayenne pepper, salt, and pepper. Mix well and form into meatballs. Heat olive oil in a skillet over medium-high heat. Brown meatballs on all sides, then transfer to a baking dish and bake in the preheated oven for 15-20 minutes, or until cooked through. In the same skillet, add pumpkin cubes and cook until slightly softened. Add coconut milk, ginger, turmeric, and cinnamon. Simmer for 10-15 minutes until pumpkin is tender. While the sauce simmers, steam or saut cauliflower rice until tender. Serve the lamb meatballs over cauliflower rice, topped with spicy pumpkin sauce. Garnish with fresh cilantro. Enjoy!
