Do you have a recipe for potato latkes? My favorite restaurant that served potato latkes closed when they retired and I need them in my life.
I usually make up the recipe based on the potatoes I have. Russets are the best for crunchy latkas but any really starchy ones will do. I used Yukon this year (the ones that are yellow on the inside and very waxy) so I needed more binding starch and they were still great.
I usually half any recipe or use my hands to figure out how many potatoes I need. Three hands of potatoes will get you like 6 latkas (which is a good number for two people. You’ll only feel a little too full.)
So take 3 hands of potatoes box grated into a bowl and half an onion grated into the same bowl. Put that into a clean kitchen towel or old t shirt that you don’t mind getting gross and stretched out. Then you use it to squeeze all the water out. Like so:
Once the liquid is out (dryer is better) you get rid of the liquid. put the potatoes back in the bowl with an egg a heaping teaspoon (you can just grab two big pinches of salt) mix it up and start adding some flour until it’s scoop able (you should max out at 1/4 cup of flour but you might need less or more depending on how much water was left in the potatoes. You can also use potato starch I think, I use gluten free king aurther flour.) if you get to 1/4 cup of flour give it little rest with plastic wrap pressed to the surface (potatoes oxidize into an angry black color left exposed to air but it doesn’t effect the taste. It just looks scary before it’s cooked. They turn out normal after frying.
I put about an inch or an inch and a half of oil in a frying pan and heat it up. (You know it’s the right temp when you put in a potato scrap and it starts bubbling and making noise.
Get a spoon and scoop out the size of latka you want. When they turn golden brown scoop them out with a slotted spoon or spider (or chopsticks if you’re really confident about your chopsticks skills) and onto a plate lined with a paper towel. Apply sour cream, curse apple sauce supremacists, and 😋. munch as soon as possible without leaving permanent burns.
(if you’re freaked out by shallow frying 1. you can put the batter in the fridge so it stays harder and is easier to work with. 2. Have a second spoon ready to push the batter out of the first spoon. 3. Have a lid handy and use it like a shield so any oil pops don’t burn you/if there’s a fire or smoke or something and 4. Make sure to slide, not plop or drop, the mix in as close to the surface of the oil as possible to minimize splashing. 5. Use a bigger pan than 9 inches or only fill a small pan a little less than half way. 6. Wear long sleeves. )

INGREDIENTS: {10 Potato Fritters}
English:
15g (2 Tbsps.) of All purpose Flour
15g (2 Tbsps.) of Potato Starch
15g (1 Tbsp.) of Parmesan Cheese
8g (½ Tbsp.) of Salt
1 Potato (50g)
1 Onion (Minced)
1 large Egg
30g (3 Tbsps.) of Shredded Cheese
Black pepper
Cheese for topping
Scallions for topping
Japanese:
大さじ 2 小麦粉
大さじ 2 片栗粉
大さじ 1 パルメザンチーズ
大さじ ½ 塩
じゃがいも 1個 (50g)
玉ねぎ 1個 (150g)
卵 1個
30g シュレッドチーズ
黒胡椒
仕上げに追い シュレッドチーズ
仕上げに追い小ネギ
Latkes
2 russets
1 yellow onion
2 eggs
Salt
Pepper
1/2 tsp backing powder
1/2 cup flour
Grate potato and onion and squeeze liquids out. Mix with all other ingredients to combine. Fill skillet with neutral oil and turn on to medium heat. Make meat ball sized latkes and when oil is hot add to pan and smash lightly do not over crowd pan. Cook three minutes a side.
Serve hot with sour cream and apple sauce. (No this is not a joke. The condiments are traditional and taste amazing!)
