In the Great Dixter vegetable garden the colourful stems of Beta vulgaris subsp. cicla var. flavescens 'Rhubarb Chard' (chard, leaf beet, Swiss chard) and Beta vulgaris subsp. cicla var. flavescens ‘Peppermint’ were providing a colourful display. The leaves have an earthy taste, a cross between beetroot and spinach. The young leaves can be eaten raw as a colourful salad ingredient, or the older midribs can be a substitute for celery in cooking.
