#175 Taco de longaniza chilanga.

La longaniza es un embutido de carne de cerdo aderezada generalmente con adobo de chiles secos, vinagre y especias y posteriormente embutida en tripa natural de cerdo. La versión de la Ciudad de México se caracteriza por tener un intenso color rojo producto del adobo de chiles con axiote que comúnmente se refuerza con algún colorante de grado alimenticio.
El sabor es ligeramente intenso en hierbas aromáticas, especias como pimientas, nada picante y con un buen balance entre carne magra y grasa. Esta versión está cocinada en doble cocción (agua con manteca de cerdo) lo que le aporta una textura crujiente por fuera y suave por dentro.
