Spinach and Potato Bake with Fried Brown Eggs (Low Spoons 2/10)
As a kid, my grandparents brought brown eggs home to me every time they visited Florida. I guess they knew a farm that had them, and this was before they were common to find in grocery stores. Anyway, they were always a treat for my dad and I because my mom doesn’t like Brown Eggs.
For that reason, I haven’t had them since I was a kid. The other day b I have in and got myself a dozen. They’re all for me, and I honestly might start buying them more often. This meal was so rich in flavor! I’m still not over how delicious it was.
Breakfast for dinner? I guess I’ve been watching too much Hannibal. Okay, in truth, I have been binge watching again, and it once more sparked my passion for cooking, even if it’s as simple as breakfast for dinner.
Ingredients: 1 bag Diced potatoes 1 package Frozen buttered spinach Salt Pepper Herbs de Provence 1/3c shredded mozzarella Brown Eggs Butter/margarine
Directions: Season and bake potatoes until one side is brown Stir in defrosted spinach and bake a little longer Stir in mozzarella, continue baking until eggs are done Fry your eggs on stoveb seasoned to taste Serve and enjoy.
I had leftover potatoes, so I’ll either fry more eggs tomorrow or I’ll pair it with baked chicken or something. Maybe steak. We’ll see.
Italian Oven Roasted Cauliflower
These were very tasty, reminded me of pizza. Pretty easy to make. To make it easier, you can use already cut up cauliflower. Then, all you have to do is measure ingredients, stir, and put in oven. I say it is low spoons. The recipe says it takes 10 minutes to prepare but it took me 20 minutes.
I made a grilled cheese in the toaster oven. I liked it better. The photo sucks. I’m sorry. It’s havarti cheese on potato bread sprinkled with herbs de provence and margarine spread.
Wine-Braised Duck Breast with Mushrooms (Low Spoons 3/10)
I made this and froze it immediately so I’m only just now getting to posting it. Sorry. I served it two ways (over tartiflette and mixed into brown rice), both equally delicious. The meat was so tender and juicy. I carved mine off of a whole duck, but you can just buy duck breasts if you’re feeling lazy. That part wasn’t counted toward the spoons for that reason.
Duck Pizza (low spoons 3/10)
Have leftover duck? I did. I had absolutely no idea what to do with it so I made pizza. There’s no sauce for this delicious mix of sweet and savory. It’s a white pizza made with, believe it or not, fig preserves. It was a complete experiment but it paid off.
I halved the dough, brie, duck, and mushrooms, reserving the rest to make a “calzone”. If I like it, the recipe will be posted, but just keep that in mind for measurement purposes. Because of that, not all measurements will be listed . Eye it up and do it to your liking. If you want to make a big pizza, use it all, or y’know, you do you.
Blueberry Apple Braid (Low Spoons 3/10)
A quick and easy dessert. The hardest part is working with the dough. It’s only 3 ingredients (5 if you add in the optional.)
