☀️ Summer Beef Lunch Week (Prep Once, Choose Daily)

Theme: BBQ-inspired, bright, and fresh with steak or ground beef. Prep once — enjoy variety all week. One of the lunch plans in the pinned link.

🛒 Shopping List

Protein:

1½–2 lbs flank steak, sirloin, or lean ground beef

Marinade ingredients: olive oil, lime juice, garlic, chili powder, cumin, salt, pepper (Alt: premade steak seasoning or carne asada marinade)

Grains:

Brown rice, couscous, or quinoa (~4–5 cups cooked)

Veggies:

Bell peppers (2–3)

Corn (frozen, canned, or 2 fresh ears)

Red onion

Cherry tomatoes

Romaine or mixed greens

Avocado (optional, add fresh daily)

Extras / Flavor:

Feta or cotija cheese

Tortillas or wraps

Fresh cilantro, lime

Salsa, hot sauce, or chipotle mayo

Hummus (for wraps or bowls)

Olive oil, vinegar (apple cider or lime juice)

🧑‍🍳 Sunday Prep

Marinate & Cook Beef:

Marinate sliced steak in olive oil, lime juice, garlic, cumin, chili powder, salt & pepper

Grill or sear ~3–5 min per side, rest, then slice thinly

Or cook ground beef with the same seasoning blend (taco-style)

Cook Grains:

Brown rice or quinoa — season with lime juice, salt, and olive oil after cooking

Char or Roast Veggies:

Roast or pan-char sliced bell peppers, red onion, and corn

Toss with oil + salt

Wash & Chop Fresh Veggies:

Halve tomatoes

Shred lettuce or prep greens

(Avocado should be added fresh daily)

🍱 Daily Lunch Options

🥗 Option 1: Summer Steak Bowl

Grain + sliced steak + roasted peppers, corn, tomatoes

Top with cotija or feta, lime juice, and chopped cilantro

Add avocado or chipotle mayo drizzle if desired

🌯 Option 2: Grilled Steak Wrap

Tortilla with sliced beef, hummus or chipotle mayo, lettuce, roasted onion, and corn Optional: add salsa or shredded cheese

Roll up tightly and serve warm or cold

🥗 Option 3: Steak & Corn Salad

Greens + beef strips + roasted corn + cherry tomatoes

Add: feta, avocado, and crispy tortilla strips

Dressing: lime juice + olive oil + vinegar + pinch of cumin

🥣 Option 4: Tex-Mex Couscous Bowl

Couscous + roasted veggies + ground or sliced beef

Top with salsa + crushed tortilla chips + cheese

Optional: add greens or hot sauce

🍉 Easy Summer Sides (Pick One Daily)

Watermelon or cantaloupe cubes

Mini peppers + hummus or ranch

Chilled cucumber salad (cucumbers + vinegar + salt + dill)

Okay so all effort it took to make this lunch may well have been worth it, it was super tasty!

Couscous, Broccoli, Zucchini, sweetcorn, garlic

Yellow pepper, spring onion, carrot, tomato, radish and egg.

Lunch meal prep ideas?

I’ve been wanting to start meal prepping for lunches at work. I always pack my lunch but it’s usually a sandwich and I’m trying to cut back on bread a bit. Any ideas would be appreciated!
