I wanted to introduce the pancakes for my mash of pancakes challenge!

Mango Jelly (Gondolier) reflects on her time spent at Nonna (MPC)'s cafe.

Everyday was the same, Mango Jelly mused.

She would come with her uncle right after his shift on the canal, walking hand-in-hand with him as he took her to Nonna's cafe. She would smell it far before the two of them would even see the front doorstep, with the sweet scent of pastries and coffee lingering in the air. And when they-- rather, she, as she always wound up running up to it first-- finally did arrive, she would always take her time to stare at the intricate menu display in the window.

Nonna's specialty was pancakes. That's what they had always put on the sign, and that's what her uncle always got. Being a big man with a voracious appetite, he'd order far more than the average person would get-- fruit pancakes that stacked higher than Mango Jelly could even reach, all topped with a generous heaping of cream and fresh fruit. Mango Jelly would order her own plate of pancakes, eating them as she listened to her uncle chat with anyone who bothered to carry conversation with him-- usually Nonna-- and watched his food get cold.

Their trips to the cafe together were never just for food anyways. They'd be there for hours-- her uncle catching up on the latest gossip and Mango Jelly trying to busy herself things other than listening to adults talk about the newest change at the top. She'd always find herself sweeping the dust out of the cafe, humming along with the antique radio that filled the air with song. She never asked to be paid-- after all, it wasn't much and she didn't mind anyways, but Nonna had always given her a small sum for doing such good work.

Only after night began to fall and the sky turned its purplish hue was when she and her uncle finally left the cafe to go home. As they walked through the humid evening, Mango Jelly would look back to see the soft light of Nonna's cafe streaming through the windows, framing the small outline of the old owner inside. She would smile and wave goodbye one final time, and the silhouette always waved back.

Everyday was the same, and Mango Jelly was fine with that.

My kitchen secret recipes are the experimental recipes I create with my leftovers of that particular recipe or can be a variation of it.For the kitchen secret, I converted my eggless pancake batter into a Danish delicacy ‘Aebleskiver’ or ‘Ebelskiver’. It’s a puffy pancake balls prepared by Danes. Actually, the basic ingredients of ‘Aebleskiver’ are similar to that of my Mango Wheat Pancake with egg. But, I tried with this eggless batter, outcome was awesome, as it also had a hidden filling..😍😋
