Polao , Mangsho chara hote pare na Kichu boss !! Yes you heard right !! Besides being a mangsho freek Bengalis are also a big misti lover, r Sesh pat e misti na hole khabar ta incomplete e theke jaye... Payesh has been always an integral part of Bengalis (we will discuss about this later in some other posts), but Polao and Mangsho winning the frame and hearts of people from ages.. This mangsho kosha was purely cooked with the masalas and marinating spices without a drop of water..this makes it richer in flavour..also to get a beautiful Basanti Polao , the amount of water plays a big role...if water is more the rice will be smashed and over-cooked , if the water is less ,then this risk a chance to get stick at the bottom of the cooker.. So the perfect amount of water , ghee , garam masala makes the polao so perfect .. Regrann from @thefoodietrails - The quintessential Bengali Sunday lunch of ‘ Mangsho Bhaat’ . While the Maangsho means meat and can be white meat - chicken or red meat - Goat meat . Fish and rice make up the staple of a midweek lunch, but come Sunday and it’s ‘ let’s meet over meat ‘ time. Having potatoes in the meat jhol/ curry is another must have. The spices and flavours of the jhol get cooked right into the potatoes and honestly sometimes I prefer the potatoes to the actual meat ! Ally supported here with raw mango and green chili paste Called ‘ aamer chacha’ which tastes like a fresh pickle. And with poppy seed and onion raw salad , called ‘ Kacha posto’ . Posto or Khus Khus has sleep I ducng properties and I can’t think of anything better for a Sunday siesta than this sublime food combination of mounds of rice and mutton curry along with kacha posto and aam chacha.
