Maqluba (Arabic: مقلوبة) is an upside-down rice and eggplant casserole, hence the name which is literally translated as "upside-down". It is made with richly succulent braised lamb and sometimes tomatoes. When the casserole is inverted, the top is bright red from the tomatoes that cover golden eggplant.
Maqluba is one of the most popular family dishes in Palestine where it is generally made with lamb or chicken and different sorts of vegetables (tomatoes, onions, aubergines, cauliflowers and others).
