Crush
some spices. (dried chillies of barely remembered heat level and origin, young cinnamon bark, green cardamom, coriander seeds, macis, ground nutmeg, peppercorns, cumin)
Add garlic, shrimp paste, shallots, salt and fresh lemongrass core shoots. Mix or blend, whatever...
Boil coconut milk, toss in the spicy paste. Wait until the oily part of coconut milk starts to separate on the top. Throw a kilo of beef cubes in the mix.
Simmer it for 2 hours.
Add cubed potatoes. Cook until it's soft and the meat is tender like broken collagen.
Add coconut blossom sugar, thick fermented fish sauce, tamarind paste and in the end some drops of lime juice.

Massaman Beef Cheek Curry
Cut up 1 kg beef cheeks into bite-sized pieces and sear in a heavy-bottomed pot with enough rapeseed oil to coat the bottom and set over medium-high heat. Sear in batches to avoid overcrowding the pot.
Add 125ml (½ cup) coconut milk and about 250ml (1 cup) beef broth to keep everything submerged. Add 1 tbsp massaman curry paste, 1 tbsp fish sauce, 2 cinnamon sticks, 3 star anise, a dozen green cardamom seeds, and simmer gently for 2 - 2 ½ hours or until the beef is tender.
Meanwhile, prepare the curry pot. Add 175ml coconut milk to a fresh pot, bring to a boil and reduce down by about half. Add 5 tbsp massaman curry paste and stir over medium-low heat until the coconut oil starts to separate out. Add 325ml coconut milk and stir to dissolve the paste. Add 1 tbsp each of fish sauce, palm sugar and tamarind paste.
Using tongs transfer the beef to the curry pot (reserving the cooking liquid). Add 1 onion, peeled and sliced, 1 large potato, cut into bite-sized pieces, and 1/4 cup chopped roasted peanuts.
Add enough of the reserved cooking liquid to keep everything submerged, and simmer for around 15 minutes, or until the vegetables are tender.
Add more fish sauce, palm sugar and tamarind paste to get the balance in taste just right.
𝙂𝙞𝙛𝙩𝙚𝙙 🇹🇭 I had wanted to try out @rosasthaicafe for a while after seeing everyone’s photos because it looked great, and I was not disappointed! I really enjoyed the food here. There’s a great selection of small plates which are then followed up by an even bigger selection of curries and noodles. With the small plates we went for the crispy prawns, which are served with a sweet chilli sauce, the honey marinated pork skewers, which comes with a BEAUTIFUL tamarind sauce, the sticky tamarind chicken wings, which had a perfectly crispy skin, and the champion chicken with sriracha sauce. For the curries we had the beef panang, which is a red paste curry and has a thicker consistency, and the chicken massaman, which was DELICIOUS, and definitely the best dish of the night. Their cocktails are really good too! You have to get Rosas Boozy Thai Iced Tea, and also Thai & Stop Me, which is close to a Mai Thai. It was my partners birthday today, we had a baked chocolate fudge cake, and a slow baked massaman lamb curry.
