STUFFED CHICKEN QUESADILLA TACO Had to have an early lunch not too long after I had my chia seed pudding because my 2 year old daughter stole more than half of it. ▫️ I had some leftover chicken and was craving a quesadilla from all the delicious looking quesadilla posts I have been seeing. ▫️ I used a strip of @cutdacarb flatbread to make a stuffed pocket with chicken and mozzarella cheese. I ended up folding it and eating it like a taco. ▫️ If you are thinking about starting keto, don’t focus on what you can’t eat. Taco Bell Chicken Quesadilla - Easy Copycat Recipe
Enjoy a delicious and low-carb twist on the classic chicken quesadilla with the added kick of jalapenos. Perfect for a quick and satisfying keto-friendly meal!
Ingredients: 2 cups cooked shredded chicken. 1 cup shredded mozzarella cheese. 1/4 cup diced jalapenos. 2 low-carb tortillas. 1 tablespoon olive oil. 1/4 cup sour cream optional. 2 tablespoons chopped cilantro optional.
Instructions: Put chicken shreds, mozzarella cheese, and diced jalapenos in a bowl and mix them together. Set a pan on medium heat and add the olive oil. Put one tortilla in the pan and spread the chicken mixture out evenly on it. Then put the second tortilla on top of it. While cooking, make sure the bottom tortilla is golden brown and crispy. It will take another 34 minutes of cooking until the cheese melts and the other side is golden brown after you carefully flip it over. Take it off the heat and let it cool for one minute. Then cut it into wedges. If you want, you can serve it with sour cream and chopped cilantro.
