Ingredients: 2 cups semisweet chocolate chips. 1 can 14 ounces sweetened condensed milk. 1 teaspoon peppermint extract. 1 cup crushed chocolate sandwich cookies. 1/2 cup white chocolate chips. 1/2 cup chopped Andes mints.
Instructions: Line an 8-inch square baking pan with parchment paper, leaving an overhang on two sides for easy removal. In a microwave-safe bowl, combine the semisweet chocolate chips and sweetened condensed milk. Microwave in 30-second intervals, stirring after each interval, until the mixture is smooth and fully melted. Stir in the peppermint extract. Fold in the crushed chocolate sandwich cookies. Pour the mixture into the prepared baking pan and spread it evenly. In a separate microwave-safe bowl, melt the white chocolate chips in 20-second intervals, stirring in between, until smooth. Drizzle the melted white chocolate over the fudge mixture in the pan. Sprinkle the chopped Andes mints on top. Refrigerate the fudge for at least 2 hours, or until it's firm and set. Once firm, use the parchment paper overhang to lift the fudge out of the pan. Place it on a cutting board and cut into squares. Serve and enjoy!
