Mail’s here! The latest entry in my annual tradition of Purim package design once again involves creating elaborate boxes to fulfill the ritual of mishloach manot, giving gifts of food to friends. (Find the last few years’ here, here, here, here, here, and here.) This year involves literally sending food in envelope-boxes. The Happy Purim message and stamp are cut out of the paper and backed with Fruit by the Foot — the best tasting stamp you’ll ever lick. The cancellation is marked 14 Adar (today’s Hebrew date) and ringed with the words describing this tradition from the Megillah: מִשְׁלֹחַ מָנוֹת, אִישׁ לְרֵעֵהוּ (“sending items to their fellows,” Esther 9:19). It’s marked in the corner “Peace + Truth” from me, echoing the letters of peace and truth Mordechai wrote to Jews across the kingdom (Esther 9:30). And who couldn’t use a little peace and truth these days? Enjoy, and Happy Purim!

Make a colorful and tasty sushi platter that is perfect for Passover. This platter is a fun and delicious treat because it has both traditional sushi ingredients and colorful fillings.

Ingredients: 3 cups sushi rice. 4 cups water. 1/2 cup rice vinegar. 3 tablespoons sugar. 1 teaspoon salt. Nori seaweed sheets. Assorted sushi fillings such as avocado, cucumber, smoked salmon, crab sticks, and carrots. Soy sauce, for serving. Wasabi, for serving. Pickled ginger, for serving.

Instructions: Run cold water over the sushi rice until the water is clear. Using a rice cooker, put rice and water in it and follow the directions on the box. Put rice vinegar, sugar, and salt in a small saucepan and mix them together. Low-level heat until the sugar and salt are gone. Take it off the heat and let it cool down. Put the cooked rice in a large bowl, and then slowly stir in the vinegar mixture until everything is well mixed. Wait until the rice is cool enough to touch. A nori sheet should be put on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, making sure to leave a little space around the edges. Put the fillings you want in a line down the middle of the rice. Use the bamboo mat to roll the sushi up tightly, and use a little water to seal the edge. With a sharp knife, cut the sushi roll into small pieces that are easy to eat. Do it again with the rest of the ingredients. Serve sushi rolls with ginger pickle, soy sauce, and wasabi.
