A wholesome and hearty mixed grains risotto with the added goodness of kale, walnuts, and black quinoa. This dish is rich in textures and flavors, making it a delightful and nutritious option for a satisfying meal.
Ingredients: 1 cup mixed grains barley, farro, and arborio rice. 1/2 cup black quinoa, rinsed. 4 cups vegetable broth. 1 cup kale, chopped. 1/2 cup walnuts, chopped. 1/2 cup Parmesan cheese, grated. 1/4 cup olive oil. 1 onion, finely chopped. 2 cloves garlic, minced. 1/2 cup dry white wine. Salt and pepper to taste.
Instructions: Set the vegetable broth on low heat in a saucepan and keep it warm. Warm up the olive oil in a big pan over medium-low heat. Put in the chopped onion and cook it until it gets soft. Add the minced garlic and cook for one more minute, until the garlic smells good. Add the black quinoa and mixed grains and mix them in. Toast them for two to three minutes. Add the white wine and keep stirring until most of it is absorbed by the grains. Slowly pour in the warm vegetable broth, one ladle at a time, letting each addition soak in before adding the next. Carry on cooking until the grains are soft and creamy. In the last few minutes of cooking, add the chopped kale and stir it in. Let it wilt. Take the pan off the heat once the grains and quinoa are done cooking. Add the chopped walnuts and grated Parmesan cheese and mix them in. Add pepper and salt to taste.
