Second in the series is this pork chop stew that hits close to home. Pork chop, home dried salt cured meat, lotus root, soy beans and bamboo sprouts, slowly cooked in a gigantic clay pot for hours. I’ve never heard of this stew being spoken outside of the Shanghainese dialect. There’s no point craving for this stew or look up which restaurant serves it because every Shanghainese knows the best pork stew can only be found in moms home kitchen. Tons of umami and zero drop of greens, pour that greasy smoky broth on some rice and no fucking period drama can pull our family off our seat.
