And now for something completely different - Noatmeal!
When Kevin first introduced the keto lifestyle to me over four years ago noatmeal was one of our favorite quick, easy, go-to meals. We hadn’t made it in a reaaally long time and since I didn’t want eggs and bacon this morning (sorry Ron Swanson) I decided to make this throw back. I wasn’t able to find our original recipe (although thinking about it now I highly suspect it’s in my recipe binder...) but I found this comparable one online.
I didn’t have hemp hearts (never even know they existed until this morning) but everything else was stocked in my cabinets. When we used to make this, we made a huge batch of the dry ingredients and just kept it in a tupperware in the fridge for us to measure out and mix together with cream and frozen berries as needed. This time I brought out some alternate toppings - sunflower seeds, pumpkin seeds, homemade butter, cinnamon, and sugar free maple syrup. My favorite combo was the butter and pumpkin seeds. Yummm.
While the picture shows the porridge looking pretty sad, small, and lumpy it was filling and tasty!
On a personal side note - I woke up again feeling crappy for the second day in a row. No clue where this is coming from or why. My first guess is that it’s the keto flu but since I’ve been eating straight keto for over two months (and super on point for over a week) that couldn’t be it. Yet I tested my urine for ketosis and it shows I’m negative - whaaaat? So don’t understand.
Fun fact - I’ve lost two pounds since Wednesday! Excited to keep up my conscious eating, calorie/carb counting, and non-splurging. Definitely motivating to see these kind of results! Here’s hoping my body can keep it up for my official weigh-in on Wednesday and for dietbet starting next week!
