Ingredients: 1 cup almond flour. 1/2 cup ground flaxseed. 1/4 cup chia seeds. 1/4 cup sunflower seeds. 1/4 cup pumpkin seeds. 1/4 cup chopped walnuts. 1/4 cup chopped almonds. 1/4 cup coconut flour. 1 tsp baking powder. 1/2 tsp sea salt. 1/4 cup coconut oil melted. 1/4 cup maple syrup. 1/2 cup non-dairy milk such as almond or soy milk. 1 tbsp apple cider vinegar.
Instructions: Preheat oven to 350F 175C and line a loaf pan with parchment paper. In a large bowl, mix almond flour, ground flaxseed, chia seeds, sunflower seeds, pumpkin seeds, chopped walnuts, chopped almonds, coconut flour, baking powder, and sea salt. In a separate bowl, whisk together melted coconut oil, maple syrup, non-dairy milk, and apple cider vinegar. Pour wet ingredients into dry ingredients and stir until well combined. Transfer the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and serve.
