Shredded pork that is tender and full of flavor is made with this Slow Cooker Balsamic Pork recipe. It also makes a sweet and sour glaze. It's great for busy days because it doesn't need much work before it cooks in the slow cooker.
Ingredients: 2 lbs pork shoulder, trimmed of excess fat. 1 onion, thinly sliced. 3 cloves garlic, minced. 1/2 cup balsamic vinegar. 1/4 cup honey. 1/4 cup soy sauce. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and pepper to taste.
Instructions: Season the pork shoulder with salt, pepper, thyme, and rosemary. Place the sliced onions and minced garlic in the bottom of the slow cooker. Lay the seasoned pork shoulder on top of the onions and garlic. In a small bowl, mix together balsamic vinegar, honey, and soy sauce. Pour over the pork. Cover and cook on low for 8 hours or on high for 4 hours, until the pork is tender and easily shreds with a fork. Once cooked, shred the pork using two forks and mix it with the juices in the slow cooker. Serve the shredded pork with your favorite side dishes, such as rice or roasted vegetables. Enjoy!
