This one-skillet pasta dish combines savory Italian sausage with hearty white beans and pillowy gnocchi, all simmered in a flavorful tomato broth. It's a comforting and satisfying meal that's perfect for busy weeknights.
Ingredients: 1 lb Italian sausage, casings removed. 1 onion, chopped. 3 cloves garlic, minced. 1 can 15 oz white beans, drained and rinsed. 1 can 14.5 oz diced tomatoes. 1 cup chicken broth. 1 tsp dried oregano. 1/2 tsp dried thyme. Salt and pepper to taste. 1 package 16 oz gnocchi. 1 cup shredded mozzarella cheese. Fresh parsley, chopped, for garnish.
Instructions: In a large skillet, cook the sausage over medium heat until browned, breaking it into crumbles with a spoon. Add the chopped onion and minced garlic to the skillet. Cook until onion is softened and translucent, about 3-4 minutes. Stir in the white beans, diced tomatoes with juices, chicken broth, dried oregano, dried thyme, salt, and pepper. Bring to a simmer. Add the gnocchi to the skillet, stirring gently to combine. Cover and cook for about 5-7 minutes, or until gnocchi is tender and heated through. Sprinkle shredded mozzarella cheese over the top. Cover and let it melt for a couple of minutes. Garnish with fresh chopped parsley before serving. Enjoy!
