Ingredients: 1 box golden Oreo cookies. 8 oz cream cheese. 1/4 cup granulated sugar. 1 egg. 1/2 teaspoon vanilla extract. 1/4 cup unsalted butter. 1 cup semi-sweet chocolate chips. 3/4 cup granulated sugar. 2 eggs. 1 teaspoon vanilla extract. 1/2 cup all-purpose flour.
Instructions: Preheat oven to 350F 175C. Line an 8x8 inch baking pan with parchment paper, leaving an overhang for easy removal. Place golden Oreo cookies in a plastic bag and crush them into coarse crumbs using a rolling pin or the bottom of a glass. Set aside. In a mixing bowl, beat cream cheese, 1/4 cup sugar, 1 egg, and 1/2 teaspoon vanilla extract until smooth and creamy. Fold in crushed Oreo cookies. In a microwave-safe bowl, melt butter and chocolate chips together in 30-second intervals until smooth. Stir in 3/4 cup sugar, 2 eggs, and 1 teaspoon vanilla extract until well combined. Mix in flour until just combined. Spread half of the brownie batter into the prepared baking pan. Spread the cream cheese mixture evenly over the brownie batter. Drop spoonfuls of the remaining brownie batter over the cream cheese mixture, then use a knife to swirl the two together. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs attached. Allow the brownies to cool completely in the pan on a wire rack. Once cooled, lift the brownies out of the pan using the parchment paper overhang. Cut into bars and serve.
