A warm and filling pea and ham soup that is great for cold days. A bowl of comforting goodness is made with soft split peas, savory ham, and fragrant vegetables. It's good for your soul!
Ingredients: 1 cup dried split peas, rinsed. 1 ham hock or ham bone with meat. 1 onion, finely chopped. 2 carrots, diced. 2 celery stalks, chopped. 3 cloves garlic, minced. 1 bay leaf. 6 cups chicken or vegetable broth. Salt and pepper to taste. 1 tablespoon olive oil. Fresh parsley for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in garlic, onions, carrots, and celery. Cook the vegetables in oil until they are soft. Put in the pot the dried split peas, ham hock or bone, bay leaf, and broth. Once the soup starts to boil, turn down the heat. Stir it every now and then for 1.5 to 2 hours. Take out the ham hock or bone, shred the meat, and then put it back in the pot. Throw away the bay leaf. Add pepper and salt to taste. Serve hot with fresh parsley on top. Have a nice bowl of Pea and Ham Soup.
