Crispy Smashed Potatoes - Easy Oven Roasted Bites

A delicious roasted red potato salad with a tangy dressing and lots of fresh herbs. Great for any meal or event.
Ingredients: 2 lbs red potatoes, quartered. 2 tablespoons olive oil. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/4 cup red onion, finely diced. 2 tablespoons fresh parsley, chopped. 2 tablespoons fresh dill, chopped. 1/4 cup mayonnaise. 2 tablespoons Dijon mustard. 1 tablespoon apple cider vinegar.
Instructions: Warm the oven up to 425F 220C. Mix chopped red potatoes with olive oil, salt, and black pepper in a bowl. Put the potatoes on a baking sheet in a single layer. Put the potatoes in an oven that has already been heated and roast them for 25 to 30 minutes, stirring them once or twice during that time. Put roasted potatoes, diced red onion, chopped parsley, and chopped dill in a large bowl. Put Dijon mustard, apple cider vinegar, and mayonnaise in a small bowl and mix them together with a whisk. Add the dressing to the potatoes and mix them together gently. Put it in the fridge for at least 30 minutes before serving so the flavors can mix. If you want, add more chopped herbs as a garnish before serving.
