Ingredients: 4 boneless, skinless chicken breasts. 2 cups chicken broth. 1 cup heavy cream. 1/2 cup grated parmesan cheese. 2 tablespoons cream cheese. 2 cloves garlic, minced. 1 teaspoon Italian seasoning. Salt and pepper to taste. 1 tablespoon olive oil. 2 cups cauliflower florets, steamed optional.
Instructions: Season chicken breasts with salt, pepper, and Italian seasoning. Set Instant Pot to saut mode and add olive oil. Once hot, add chicken breasts and sear until golden brown on both sides. Add minced garlic and cook for another minute. Pour in chicken broth, heavy cream, parmesan cheese, and cream cheese. Stir until well combined. Close the Instant Pot lid and set to high pressure for 8 minutes. Once done, quick release pressure and carefully open the lid. Remove chicken breasts from the pot and shred them using two forks.
