Christmas is just around the corner and I received the best early present to myself - I’m officially a fourth year medical student! Such a relief and I can finally enjoy the holidays. Well, as much as you can enjoy crazy Asian family company!
Originally I wanted to write about tips for surviving the family during the holidays but honestly, I don’t think I have any worthy of sharing. Not entirely sure how I’m getting through it! Lots of patience, comfort food, tea and occasionally whiskey!
Have a wonderfully jolly, festive and safe holiday, errbodi! Drink lots, eat more and laugh the most :)
Festive Roast Whole Cauliflower
one whole head cauliflower, minced garlic, cumin, turmeric, curry powder, chilli flakes (optional), lemon, olive oil, salt & pepper
Preheat the oven to about 180 degrees celsius. Line a baking tray with some parchment. Wash the cauliflower with the leaf trimmings and all. Smother the cauliflower with a tbsp of minced garlic, a tsp of cumin, turmeric, chilli flakes and curry powder. Then squeeze the juice of one lemon over it, drizzle generously with a good quality olive oil and season (mind the pun!) with sea salt and black pepper.
Roast the cauliflower in the preheated oven for about 45 minutes 0 one hour depending on the size of your cauliflower. Put a skewer through the centre of it - if it goes through all the way easily then it is cooked.
