Maple Roasted Turnips
These beautifully glazed Maple Roasted Turnips are a treat on their own for dinner, on a chill Autumn evening. They also make an excellent side to beef, poultry, pork or even duck for a hearty lunch!
Ingredients (serves 2 to 4):
1 1/2 tablespoon unsalted butter
1/2 tablespoon olive oil
1 teaspoon dried thyme
2 large garlic cloves
5 medium to large turnips
1 teaspoon coarse sea salt
4 tablespoons pure dark (Grade A) Canadian Maple Syrup
Preheat oven to 200°C/395°F.
Melt butter with olive oil in a roasting dish on the stove, over a medium flame. Sprinkle in dried thyme. Crush garlic cloves and add them to the dish.
Thoroughly scrub turnips under cold water. Pat them dry, and cut each in half. Add turnip halves to the dish, tossing well, to coat in butter, oil and herbs. Season with coarse sea salt.
Place the dish in the middle of the hot oven, and roast, at 200°C/395°F, 30 minutes.
Drizzle generously with Maple Syrup, tossing to coat, and roast, another 5 to 10 minutes, at 200°C/395°F.
Serve Maple Roasted Turnips on their own, or as a side to Roast Sausage and Onions or Roast Beef.
