This is a two-fer! Mini salmon latkes are “fried” so perfect for Hanukkah, but small and pretty, so also good as an hors d’oeuvre for New Year’s. They’re on my menu. Salmon latkes always make me think of my mom, who died during Passover an hour or so after she made lunch -- salmon latkes, which she loved. She made them frequently. I love them too but change her recipe occasionally, like with this one, which has potato and spinach.
