Ooooooo, man, hard question!! There are a lot of talented writers in this fandom for sure. It's hard to narrow it down! I'll just pick some of the latest ones I bookmarked.
"After All This Time, I Finally Found You" by Kuraiarcoiris. An AU where Navi is actually Hyrule, sent back in time by the Faerie Queen at the Deku Tree's behest to help Time out during his first adventure. Hyrule and Time is a very underrated Link pair to begin with, and this one is just so sweet.
"New Hands on Ancient Hilts" by TimeturnerJay. Fic that explores the impact Four left on the timeline and the things he left for his descendants to help them on their journeys. MUST read for any Four fan.
"The Art of Side-Questing" by HaveMyWeedCookies. MAN I really need to get back to reading/commenting on this, it's just that I tend to enjoy each chapter so much that I have so much to say at the end, and thus writing comments can take me a long time, so I put it off. >.< But this one really is SO good. The Chain through the eyes of a random citizen who gets caught up in their nonsense in an era after Wild's. Great character study and what the legend of each Link means to the everyday citizens of Hyrule.
"A Piece of Heart" by Shearlin. Best Legend-centric fic I've read, hands down. Good food, yum yum.
"Like a Bayonet Against My Throat" by SilverneNonsense. Best portrayal of Four's Colors I've ever read, hands down. Also best Four and Legend interactions I've read, hands down. ALSO portrays Four's Shadow as the unrepentant evil bastard he was in the Four Swords game, which. Like, nobody does. It's refreshing.
7.🌠Do you have a favorite headcanon that you’ve picked up from the fandom? Where did you first see it? (or if you don’t remember, do you have a favorite work which features it?)
I'm very, very fond of the headcanon that Wind is Four's direct blood descendant (and to a lesser extent, that Wild is Warriors' direct blood descendant). I recall seeing it in a meta post talking about the theory that's currently buried in my tag, and the Wild-as-Wars'-descendant one in a fan comic. For all that Wind-is-Four's-descendant is popular in the fandom, though... I don't really see that explored all that much? The only one that comes to mind rn is "Small Fry" by Skyward_Arpeggio.

I'm gonna be basic and say probably the Sunset Arc so far. It introduced real, genuine stakes and had a lot of fantastic reveals and character moments.
