Ingredients: 1 can 15 oz black beans, drained and rinsed. 1 cup corn kernels. 1 cup diced bell peppers assorted colors. 1 cup shredded cheese cheddar or Mexican blend. 1 teaspoon ground cumin. 1 teaspoon chili powder. 1/2 teaspoon garlic powder. Salt and pepper to taste. 10 small flour tortillas. 2 tablespoons olive oil. 1 ripe avocado. 1/4 cup sour cream. 1 tablespoon lime juice. 2 tablespoons chopped fresh cilantro. Salt to taste.
Instructions: Black beans, corn, bell peppers, shredded cheese, cumin, chili powder, garlic powder, salt, and pepper should all be combined in a bowl. Blend thoroughly. To make flautas, place a dollop of the bean mixture onto each flour tortilla and tightly roll. Heat the olive oil in a big skillet over medium heat. Flautas should be cooked until golden brown and crispy all over, seam side down. Avocado, sour cream, cilantro, lime juice, and salt should all be combined in a blender.
