One of the most airy loaves I've had to date in a homemade bread! I have an extremely dry house and as much as I try a totally no-knead overnight loaf just never opens up enough so I'm experimenting with a 2 hour rise, semi-kneaded bread that maybe soon I'll be able to share with others who have almost no humidity in their homes 😂 .. I used 1/3 white flour, 2/3 @bobsredmill whole wheat flour, and @kingarthurbaking vital wheat gluten to help with the rise! I also added whole flax seeds and caraway seeds to the loaf for a major rye bread flavor 😋🍞
Here’s a very lazy “welcome back” loaf with spelt flour and rye sourdough starter. The dough was very soft so I enrobed it in polenta before baking so that it wouldn’t stick to the tray too much (it did a bit though).
It’s been a tough few weeks but at least I’ll always have peanut butter
