Ingredients: 4 large bell peppers, any color. 1 pound lean ground beef. 1 cup cooked rice. 1 cup shredded cheddar cheese. 1 can 14.5 oz diced tomatoes, drained. 1 small onion, finely chopped. 2 cloves garlic, minced. 1 teaspoon dried oregano. 1 teaspoon dried basil. 1/2 teaspoon salt. 1/4 teaspoon black pepper.
Instructions: Take the bell peppers' tops off and take out the seeds and membranes. Diced tomatoes, onion, garlic, oregano, basil, salt, and black pepper should all be mixed together in a large bowl with ground beef. Fill up each bell pepper with the beef mix. Put stuffed peppers in the crock pot. Put the lid on and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the peppers are soft and the filling is done. If you want, you can serve it hot and top it with more shredded cheese and chopped parsley.
