A delicious and quick Mexican noodle soup made in a pressure cooker. Perfect for a comforting meal on a busy day.
Ingredients: 2 tbsp vegetable oil. 1 cup fideo noodles. 1/2 onion, finely chopped. 2 cloves garlic, minced. 1 can 14 oz diced tomatoes. 1 carrot, diced. 1 zucchini, diced. 6 cups chicken broth. 1 tsp cumin. 1 tsp dried oregano. Salt and pepper to taste. Fresh cilantro for garnish. Lime wedges for serving.
Instructions: Press the saute button on the pressure cooker after turning it on. Fideo noodles should be cooked in vegetable oil until they turn golden brown. Take it out and set it aside. Put the onions and garlic in the same pot and cook them until they get soft. Add zucchini, carrot, cumin, oregano, salt, and pepper that have been cut up. Mix well. Once the noodles are toasty, add them back to the pot along with the chicken broth. Just put the lid back on and turn the pressure cooker on to soup mode. Then wait 5 minutes. After it's done, let the pressure go down, open the lid, and stir the soup. Add fresh cilantro and lime wedges on top and serve hot.
