Jackie Chan once said "Coffee is a language in itself". Let's look at the most vital element behind this language - the coffee beans. Beans are green, soft, spongy and smell grass-y just as they come afresh from the farm. These can remain in this state for a while without a loss of quality. Beans are roasted to create that magical potion we call coffee! Roasting at high temperatures causes chemical changes to the beans and making them weigh less. Once roasted to its peak of perfection, beans are quickly cooked to stop any further roasting. At this point, they smell just like coffee, are crunchy to bite, ready to be ground and brewed. It is believed that the French originally used a "teabag" method of brewing coffee - putting ground coffee in a bag and pouring boiling water over it so that the grounds could be removed - quite different from the Turkish method where coffee was brewed by boiling water and coffee together and allowing the grounds to settle out in the cup. The French also introduced milk to coffee - the previous cultures of Ethiopia and Arabia who enjoyed coffee were not milk drinkers, as were the French, who invented coffee-milk or "Café au Lait, and still enjoy it today, especially for breakfast. For me, adding milk or simply having black coffee is totally one’s personal choice, and you should enjoy it the way you like it. Just make sure that the coffee is fresh !
