Ingredients: 2 large onions, thinly sliced. 2 tablespoons olive oil. Salt and pepper to taste. 300g pasta of your choice. 2 cups grated cheese Gruyere or cheddar. 2 tablespoons butter. 2 tablespoons all-purpose flour. 2 cups milk. 1/4 teaspoon nutmeg. 1/4 cup breadcrumbs.
Instructions: Preheat oven to 375F 190C. In a large skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, stirring occasionally, about 20-25 minutes. Season with salt and pepper. Meanwhile, cook pasta according to package instructions until al dente. Drain and set aside. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes, stirring constantly. Gradually whisk in milk until smooth and thickened. Season with nutmeg, salt, and pepper. Add grated cheese to the sauce, stirring until melted and well combined. In a large mixing bowl, combine cooked pasta and caramelized onions. Pour cheese sauce over the pasta mixture and toss until evenly coated. Transfer the pasta mixture to a baking dish. Sprinkle breadcrumbs evenly over the top. Bake in the preheated oven for 20-25 minutes or until the top is golden brown and bubbly. Serve hot and enjoy!
